Summer in Maine is a glorious time of year. Food from both the land and sea provide us with so much abundance. Although the summer solstice doesn't provide as much fresh produce as our southern New England states, there is still plenty of wild foods to harvest and work with in the kitchen.
Class will start with a walk on Frank's land where we will identify, collect, and cook up once we are back into the kitchen. Learn techniques to properly prepare ingredients like wild mushrooms, lamb's quarters, and more. Since the season for most of these choice edibles is short, you will learn a few preparations that will allow you to enjoy these ingredients well into the fall and winter.
All classes include a pdf downloadable recipe packet as well as beverages and a light lunch. Students are expected to be prepared for the outdoors as well as being comfortable in the kitchen. There will be some hands-on work needed, so feel free to bring your own knife and apron if you like.
