Aronia Infused Vinegar

This deep, rich vinegar infusion started with a family foraging adventure in last September. While collecting autumn olives, Frank noticed a small patch of dark berries. Once identified as Aronia prunifolia (Aronia berry), we harvested a few pounds, and happily brought them home. 

The berries were infused in organic apple cider vinegar which we purchase from a local farm. We allowed two months to infuse the two ingredients before straining and bottling. 

Chef Frank loves this vinegar as the base of a mignonette for oysters, but it will surely make a delicious salad dressing.
