The earthiness of dandelion shines in this autumn infusion of dandelion root and locally purchased organic apple cider vinegar. We harvest our roots in the fall, when the plants begin to die back and send their energy back into the root before winter. 

A two month infusion follows as the thinly sliced roots impart their flavor and medicine into the living vinegar. Enjoy in dressings, sauces, or add a drop over oysters.
